However, customers come here for the quality of service/product we provide. in order to be the premier quality food retailer in the world, we need to focus on providing the highest quality products. Reheating food reduces product quality. You’re right that we waste a LOT of money at night but it all boils down to being mindful of what and how much we cook in the kitchen. Technically, we’re supposed to leave the fryers open until we close so we can keep providing fresh, quality products until closing. We can’t just make 20lbs of tenders at 7pm and say “I’m done cooking let’s shut everything down.” Because at the end of the night, those tenders would be out of time and we could be scanning out al or none of those tenders because the demand can be unpredictable. In order to reduce waste we need to be more mindful of what we are doing in the kitchen and rotating products.

  8. Corporations’ goals are to make money. Improving efficiency can raise profits, but overwhelms the workers who tangibly carry out the company’s mission. This reduces employee morale and decreases productivity. Thus, turnover rate is high especially in deli and bakery. Double whammy. Hopefully corporate notices this one day
