I've not got one, but just watched their video showing the charcoal with wood on top and (looking at the colour of the pizza when he turns it) that oven is not super hot.
Did you watch the Bertello video? I think I have watched that, and a couple others.
Yeah, the Bertello one, he doesn't seem to put much fuel in either which can't help.
